If it is that much better that it ruins cheap soy sauce then yes. If not then it is probably not worth it.

Besides for the obvious that it's unpasteurized... It smells and tastes much better.

What difference does the pasteurization make? How is the flavor better?

I try to stick to gluten-free tamari or soy sauce- so I'm just wondering how I'm missing out or what I should like for in a gluten-free version...

Depends on what you're putting in it. Nut butter based cheesecake shouldn't be baked because it will change the consistency of the cake. The two that I use that are no bake (and no gelatin) are Nutella based and peanut butter based.
