Windows Mobile is key for that kind of functionality, although I agree the Fuze wasn't so hot (at least not with the stock 6.1 firmware).
Have you considered the Tilt2 (touch Pro 2)?

Excellent keyboard (arguably the best keyboard on ANY mobile device currently) with a tilting widscreen NTSC video display (800x480, widescreen DVD resolution). Also, has an excellent battery compared to the Fuze, and a conference call system.

SuperFlyer, Remember that this guy is coming from a Fuze, which is a Windows Phone with embedded Office. The Nokia is a great smartphone, but has very mediocre office support, and is going to seem like an archaic way of doing it in comparison. Not knocking the E series, I have a special place in my heart for Symbian, but for the requirements this guy is looking for (excel), I wouldn't recommend it.

FYI I've used both, and not as one would think, the native compact excel isnt better then the one created for nokia, maybe even the other way round. (I had this fear too before buying the nokia.

The nokia is also much more stable the windows mobile

I've also used both. My "phone drawer" includes an N95, E71, in addition to my armada of mostly HTC handhelds. I still stand behind my statement, although I respect that you disagree. :)

For mobile phones, you can add a form to a spreadsheet and it makes it super easy to add entries through a phone

Yes, it becomes a website. However, as you put it, its only a solution for data entry.

The iPhone as well as all the phones that run on Android OS have neat excel apps.

Google docs is integrated very well with the new android phones. Froyo 2.2 will be even better I heard.  It's an alternate option.

Unless I missed something in the latest Froyo news, Google Docs support pretty much sucks. I was shocked when playing with my Android built (admittedly its only donut) and the sheer lack of Docs support out of the box.

I guess you agree that windows mobile isnt stable, right...?

It is if you use it right. The problem is that 90% of WinMo phones purchased from a US carrier are "broken" out of the box, since the carrier pours too much of their own customization into it. The original unbranded HTC models are FAR more stable (as are the non-carrier WinMo devices of yesteryear, such as the Dell, HP and Compaq models).

That's why the WinMo enthusiasts are all into the "custom roms", where you remove the carrier garbage, cook in what you want, and have a solid running phone that can do pretty much anything.

Yes, I agree that you *SHOULDN'T* have to do this. This is why I don't recommend WinMo to most people. But for those willing to tinker a bit, it can be extremely stable.

I don't currently use an Android device, but getting an EVO and following the news closely.  I believe Froyo has greatly enabled google docs integration.
