Mid summer vacation 7-9 days adults only wasn't anywhere yet.
Looking for Hotel with kosher food served   
KMR but it costs. We went on our own (like to Banff) and brought our own food from Pomegranate. Banff is great

Looking for somewhere to stopover for a few days midweek in early June on the East Coast.
It should be a place with beautiful beaches that are empty  :)
Preferably not too humid.
Good value points hotels are a plus.

Was looking at the areas around Wilmington, NC or Jacksonville, NC... Anyone been? Also open to other ideas.

Those amount of days make sense to me for a normal/slower pace trip, although I know you usually prefer to pack in your days and then technically you wouldn't need that many days in either city. Both cities are doable for Shabbos, so the order doesn't matter. However, haven't you been to LON already - maybe try a different city? Perhaps list where you've been, and we can suggest other nice places.

Shoot I apologize, read so much about your failed trip last year that I got confused and thought you've been there. Sorry to bring up bad memories. :-[
From the places you haven't been to, that I have been and can comment on, I like those 2 city options the best. I enjoyed Spain/GIB a lot, but none of the cities need more than 1.5-2 days so you'd be doing a lot of driving and with kids that doesn't sound ideal.

Our favorties so far were St Regis Puerto Rico as well as Atlantis Bahamas, so something similar.

Def gets hot enough.  If you are looking for a points hotel, then Fairmont.  If you are willing to spend, grotto resort was very nice and hung out at Elbow Beach resort, it was gorgeous
