Real men use only cast iron. http://www.amazon.com/Lodge-L10SK3-12-Inch-Pre-Seasoned-Skillet/dp/B00006JSUB

(I think one should kasher it by running it in the oven on self clean, and the reseason before use. This is because it comes preseasoned with oil which does not have a hechsher, and there is no neemanus that it is even vegetable oil, and even Rabbi Abadi who thinks you can trust them about food would al carcho be modeh here where it is not food)

+1
Nonstick pans can't touch properly seasoned cast iron. No carcinogens is also a huge plus.
FYI, Lodge used to say that their products were seasoned with kosher vegetable oil but then stopped saying that a few months ago...

People have different tricks. The main idea is to not care about it ending up greasy.
I pour kosher salt in, scrub it with a shmatte or paper towel, and then just put it away. And use it again the next time.

It stays surprisingly clean that way.

I also have one which is a grill pan, and I grill meat in it. That one doesn't stay very clean at all, but I just don't care. I keep it in a shopping bag so it won't get dusty, and just take it out and fire up the old boy.

I've gone thru so many supposedly non stick pans and they're all garbage and always end up sticking. That's why I've been looking for one that actually does what it claims.
