I would if i was wrong, but im not. what you found is a camera that interprets the wavelengths generated from the infrared and guesses colors based upon algorithms.
It is impossible to generate true color from night vision cameras because you need light to reflect color. IR cannot reflect colors.

Does anyone disagree?

I own 6 of these and am adding more including the exterior models. They're excelent! They pan and tilt, have TWO way audio (so you can spook the babysitter by telling them not to do something and hear whats going on) and the night vision is pretty good!You can record. Google the different ways to do it, I did it by getting this free Samsung phone (http://www.dansdeals.com/archives/35514) as the "DVR" and attached an external hard drive to store the footage. I hooked up the phone to my home WiFi and can now access archived footage from anywhere in the world. I use this app on my S3 to view the cameras: https://play.google.com/store/apps/details?id=com.rcreations.ipcamviewerBasic They have a free version to try out.

how did you set up phone as DVR ?
Use the phone as a mobile viewer with an app, but have it record everything (set it to rewrite over oldest data) onto a connected external hard drive.

Thoughts?

Nest is $200 each, can't store video locally, and costs for cloud storage.

Why is that any better than the Amcrest IP2M-841 at half price, can record locally, and offers 4 free hours of cloud storage?

I know it's not for everyone (especially people renting) but recently when I expanded and redid my house, I ran wiring (in my case, cat5e) for my camera system to every bedroom. This way, when I do have a baby or little child with a babysitter, I could just plug in a camera and see what's happening (plus I could use it as a baby monitor because I have screens in my kitchen, home office, and bedroom). I highly recommend doing this, when possible.

How did you terminate them and what kind of "temporary" cameras do you use?

What do you mean by terminate?
I won't use temporary cameras. It is an IP system with POE so it is basically just a matter of screwing the camera to the ceiling and plugging in the network cable.
