Airline Checkin Counters: Kowloon Station (below the W Hotel) to check your bags in. You then take the MRT straight to the airport (with just a couple of stops). It's super convenient and quick. You don't have to stay at the W to check in at Kowloon station though (and FWIW you can check in at Hong Kong station on HKI, too).

Regarding sightseeing and attractions see the wiki. As far as hotels there's a Hyatt Regency down the block from KZ and a Sheraton close by as well, however the nicest is really the Shangri-La right next door to KZ. I would highly recommend the Shangri-La. You can try making reservations from the travel agent on KZ's website for cheaper rates.
