The KCI - Kashrut Committee of Ireland is the only Kashrus in Ireland.
The Rav Hamachshir is the Rabbi of the Dublin Hebrew Congregation Rabbi Lent - A Chabad Rabbi.

SuperValu has a great Kosher Section with Fresh bread, challah, cheese, frozen/fresh meat, vegetarian (Tivall) products, frozen meals (can be reheated in non kosher ovens), wine and other basics are also available.
Open till 10:30pm seven days a week.

Bread Irish Pride Bread is Kosher (Re Pas Yisroel The Oven is officially turned off twice a year around Christmas Day and middle of the year around June 30 - Both times it is turned back on by the Rabbi. Some rely on this some don't, mainly because in this case there is no system for alerting the Rabbi in case the factory experiences an issue. Frum people in Ireland rely on this bread for 3 weeks after the fire is re-lit.)

Catering:
There is only one Kosher Certified caterer in Ireland, Melanie Stein.
Melanie cooks in the kosher kitchens of the Dublin Hebrew Congregation and is under basic supervision (ie there is not a mashgiach constantly on site).

The Standard cooking is NOT glatt, nor cholov Yisroel or pas yisroel.
(In Development is a Mehadrin option - by RCArentals in conjunction with Melanie/Rabbi lent - updates to come.)

Shabbos Meals
The Dublin Hebrew Congregation may be able to arrange Shabbos meals at local residents.
(There is a mandatory Donation of 36eur p/p.)
Email: office@jewishireland.org with your, Names and Dates - requesting to be paired with Mehadrin if you specifically want mehadrin.
Typically Friday night guests are paired with Rabbi Lent.
Note: They cannot guarantee this - and it's a case by case request basis.

Was just thinking I'd love to see Ireland

How many days is a good amount? What are the main/fun attractions there?

Main attractions are the nature. Based on my preliminary research I would do Thursday-shabbos in Dublin. Then spend the week touring the countryside and leave Thursday out of Shannon

You have a much better shot for Aer Lingus Avios-availability out of Shannon (only flies to BOS).
Not that DUB availability is that bad..,just that now in the summer, it's tough.

Have never been to SNN.  If you would like to just visit Shannon, then I'd assume you would want to fly to SNN ;D (duh!).
IF you just want to go to Ireland to connect to other countries in Europe, then you'd have a very difficult time finding any connections from SNN; while from DUB (being the primary airport in Ireland) you have many many connections throughout Europe. 
Dublin is a large major international airport and you have some beautiful lounges.  If you fly in business, you are entitled to enter the Aer Lingus lounge, a really nice one.  And their business class is also quite impressive (fully flat bed).

I would aim to fly business class, and depending on my itinerary, I might want to connect to other parts of europe would also like to see the lounge in dub
so i guess DUB it is!
Looks like there is a chabad house 25 mins away from the airport which is pretty cool too.
Anyone know if it's open year-round?

sorry in advance for the craziness of this post.

so i found a great deal on expidea for flight and hotel. i spent most of my nights in westen Dublin. its down the block from trinity college. ( thats the main part of the city)(all the bars and hot spots.)
for food i do only Glatt kosher i found a women who sells glatt kosher food (60 euro) came with chllah bread,  big thing of chicken soup, big main 2 slices of (you can pick) chicken, meat,or turkey. vegys and kugle. and some type of cake. she pre rapps everything and gives the hotels directions how to heat it up in kosher standerds. now i went right after i finished school,so there was a lot of drinking. temple bar a big hang out with good music but mainly full of tourists
and over prices drinks. i did a pub crawl and found some awesome local pubs even better music and cheep drinks.

daily or weekly bus pass is a good buy. you can hop on and off anytime and place.
when i was there he only kosher place to buy food was near the jewish community (about 200 people). and that is a tiny room in a large supermarket chain. 

jamson tour very cool again lots of free booze.

Guinness beer tour the same( i never liked it, now i love it)

killam gale prison a very cool jail tour, you get to see old style cells and more modern ones.

Dublin castle tour was free and some good storys on the history.

lots of other castel tours.

i did the ring of kery tour.( lots of different options on how long of time i did 6 hrs.

did some traveling to kork, blarney, and limerick.

socker match as well.

most of everyone was very friendly, inviting me in to there homes ansdoffering me places to sleep and food. locals in the bars came over to talk and ask us what we did and to tell us what to do.

Glatt Kosher food lady is Hinda Bloom  her email is hindabloom@gmail.com there is also one kosher restaurant thats only open Thursday nights and you should speak to her as well. Also here is a phone number for her From overseas dial 353 - 862 788-326.

Has anyone stayed in Ireland recently? I have 1.5 days (2 nights) there coming up and have been looking for ideas on where to stay and what to do. In terms of lodging, it seems like there closest chain hotel to the Dublin Hebrew Congregation is a 15 min drive/20euro taxi. If I go there for Shul twice a day, it will likely be so expensive that I might as well forget staying somewhere with points and book a B&B that's within walking distance of the Shul (as the Shul's site suggests). Any thoughts?

Right. So I have to calculate what'll be more expensive. Paying for the B&B and paying for cabs into town, or staying at the hotel for free, but paying for cabs to the Shul.

Old Jameson looks like it's not too far away, but Titanic is 2 hours away and Moher is 3 hours away. Is that what your brother did? Nothing to do closer to town besides pubs? Can you ask him how he got to those places?

He went last Shavuos so he actually didn't do all that. A few of his highlights were Trinity College and going to the races (horses).
I have family friends who were relocated to Dublin for a job last year... those were their top recommendations. I'd be happy to find out some more for you!
