Awesome.

Did you feel you had enough time at 2.5 days? Or would you recommend a bit longer?

Ideally 4.5 days would do it - one more day would have allowed us to do cave tubing - some of the caves have tubing where you go down the river for a really long time in total black. We didn't have time for that. I would also have liked to have more time at Caye Caulker. 2.5 days definitely works but if possible try to get a bit more time there.

Ok so didn't get the $210 from LAX return but got $325 for December. Any recommendations of hotels? Is it worth renting a car there?

TIA

No hotels. No car.

If doing the reef (diving, snorkeling) you should stay on one of the Cayes. Either Caye Ambergis, or Caye Caulker. Neither has real hotels, but Caye Ambergis is more commercialized.

If doing the jungle, ruins, caves, you should stay inland. No real hotels.

Definitely don't stay in Belize City, which is the only place with real hotels, unless you're mainly interested in exploring third-world inner city.

Flying out of Belize Sunday so still avoid the city for Shabbos?

Appreciate the input.

I stayed on Caye Caulker for shabbos. It's like a half hour boat ride IIRC.

[/quote]Id say yes, Caye Caulker I would say is better for shabbos, cleaner (in a belize way) than Ambergis and nicer for walking.

So I just got back from 5 days in Belize and here is a quick run down of what activities we did etc. We arrived in Belize City Tuesday at 12:30 roughly and took a taxi to the water taxi and off to San Pedro. From there we took the Coastal Express to our hotel in Ambergis Caye. It took us to the pier where hotel staff waited with drinks and someone to help with the luggage. Wednesday we rented a golf cart and headed to San Pedro for some exploring (the roads are awful and flooded) but the kids had a great time. Drove half on beach and half on the road as allowed. Stopped off at some of the resorts for kids to play around (open policy) and grabbed a drink on the water at sunset.
Thursday my mil arrived and watched the kids while my wife and I headed out with http://www.amigosjungletours.com. We did the Mayan ruins followed by a really fun time zip-lining (through the jungle) and ended off with a chilled cave tubing down the river. Hotel took care of all travel arrangements as we stayed far north in San Pedro (stayed at La Beliza). Friday we headed to snorkeling which was really awesome (saw some sharks, turtles and dozens of different fish and rays). Afterwards we went to Shark Alley and swam with some nursing sharks (GoPro died right before we got there so no pics).
Shabbos we pretty much just chilled at the hotel and then headed back to the US. All in all a great trip.

If you plan on going please make sure you spray insect replant as you will be eaten alive out there. Belikin beer is not bad but pretty much as good as you will get there. Rum is cheap and plentiful.

Thanks for the report! Shame your gopro died by shark ray alley. Nice that you went in the water there and didn't just watch from the boat  :)
