In general I would recommend paying a few extra bucks rather than going with 1&1 for anything. Their system is so annoying and such a hassle to deal with it's not worth the money you save. Their system is the worst I've ever dealt with. (well, actually, I once had a client who had his domains registered with some Italian company, that was actually the worst. 1&1 is the worst American option I've seen.)
All said and done, A grantfathered, Google Apps is the way to go.

With go daddy one free email address is included with domain registration. You can setup a catch-all option and a forwarding option on top of that at no additional cost. That's how I have it.

Do u want only one email or are you going to want more addresses in the future? Some registrars will include only one and others will include several
and some registrars let you make a catchall, so you can have unlimited addresses! yay!
