In general I would recommend paying a few extra bucks rather than going with 1&1 for anything. Their system is so annoying and such a hassle to deal with it's not worth the money you save. Their system is the worst I've ever dealt with. (well, actually, I once had a client who had his domains registered with some Italian company, that was actually the worst. 1&1 is the worst American option I've seen.)
+1 have also had multiple bad experiences with 1&1.  IMHO the most important thing to look for is customer service (can you get in touch with a live English speaking person?)  I would rather spend a few extra dollars for this piece of mind.  Hopefully, one will never have problems, but if you do having good customer service makes all the difference.

It will show in outlook as xxxxxx@gmail on behalf of xxxxxx@yyyyyyy
I just discovered that you can also give gmail the SMTP settings,  then I doubt that it will show that way.

I have some domains with GoDaddy and abuch of forwarding addresses which are thru gmail (not g-apps). Lately all my emails are bouncing back (had the problem as well when sending from a g-app email to a regular GoDaddy email a days ago).
Any good replacement?

With go daddy one free email address is included with domain registration. You can setup a catch-all option and a forwarding option on top of that at no additional cost. That's how I have it.

I have the same thing set up with namecheap.com. Very easy to set up.
Workflowy. You won't know what you're missing until you try it.

Create a domain name, say superspeed.com

Are you trying to register a domain for a website (ie www.superspeed.com) or you just want the email address (123@superspeed.com)?

It's pretty easy and depends on where you're buying the domain from. I've done it with dreamhost, but wherever you buy your domain from, I'm sure someone on DDF has done it before!

and some registrars let you make a catchall, so you can have unlimited addresses! yay!
