From Dining In... Wholesome Chocolate Chip-Oatmeal Cookies...
5 eggs, 2 C. flour (can substitute whole wheat), 1 C. wheat germ, 1 tsp. baking soda, 1 tsp. baking powder, 1 and a half C. brown sugar, 3/4 C. sugar, 1 tsp vanilla extract, 1 and a half C. oil, 2 and a half C. orange juice, 6 C oatmeal, 2 C. chocolate chips. Yield about 5 dozen.
Preheat oven to 400. Combine all ingredients, except chocolate chips, in a mixing bowl and mix well. Stir in chocolate chips. Drop by teaspoonfuls onto ungreased cookie sheets, 1 and a half inches apart. Bake for 10-12 minutes. Do not over-bake...
My notes... 2 cups is about one and a half bags of cc's. You may need more than the stated amount of oatmeal (if it seems too watery add oatmeal). Can skip wheat germ and add some flour and oatmeal instead. We use costco Ultragrain flour. We use olive oil. *After cookies cool down we put them in ziplock bags and freeze, then eat straight from frozen, this somehow makes them taste better.
