Who has room for eggs in the fridge on pesach? We never refrigerate them. Just don't leave them in the sun

There are many civilized places around the world where eggs are not a fridge item at all. In Israel legal eggs are stamped with 2 dates. one if kept in the fridge one if left out.

Yes. The rule is you may not eat non kosher foods. This rule applies regardless, but the severity
 of the sin varies by the circumstances.

Primarily it would be the kosher certificate. There are many different organizations that certify kosher foods.

Knowing the owner of the facility is a contributing factor as well.

You're a day early... When I go to a restaurant, I trust the the organization that certified it kosher, is upholding the kosher standards. There are many kosher certifications that have been found not to uphold Kashrus to everyone's standards, and many wouldn't eat by those particular establishments. I have also seen places where a "trusted" organization seems a bit too lax for my liking, and therefore wouldn't eat there.

If I'm walking in there that means I trust the kashrus orginization that is supervising it and thus very confident... any organization that doesn't have a good reputation will lose my confidence and I wouldn't eat in an establishment under that supervision
If an organization were really to lax and letting things slip through the severity of the sin goes way down for the eater and way up for the person who's liable for it happening

There a measures in place to ensure that kashrut standards are being upheld. cRc is one of the bigger trusted organizations.

It's not the workers that you're trusting it's the person/people who are supervising the kashrus of the establishment that you are trusting to make sure that everyone is following the rules set in place by that organization.

As others have mentioned, it's the owner that needs to be trusted.
And

Most kosher places have non-jews employed in some capacity or another. This is the reason for a Mashgiach (kosher supervisor) to be on site at all times. He is (supposed to be) the only guy who has the key to, either the facility, or particularly where the food and equipment are locked.

Although most places don't have a Mashgiach on premises the entire time, in halacha it's usually enough if the mashgiach has all the keys and can enter the facility at any given time.

As others have mentioned, it's the owner that needs to be trusted.

And for some, that goes beyond any certificate from a supervising agency.
I've been waiting over 5 years with bated breath for someone to say that!
