Well, in my case, I occasionally am in an area without sufficient parking and waste way too much time trying to find.

When you'll get a reminder on your phone, UI won't be able to extend for another hour on the phone?

I don't think my way is traceable, unless they have a picture of the ticket in your car...
they chalk your tires and record your plate.
There are also a lot of 2 hour limit non metered zones in Boston. They still manage to track your vehicle

when you've already paid for too hours it won't let you extend it further. After your parking session is over then you can start over, but then again, it's still technically illegal and you need to move your car

So basically I can sit in my office, & wait for it to expire, then a minute later pay again?

Yes but...
In boston , I was refilling my meter by phone every 2 hours and started getting "over time limit" parking tickets. They actually enforced the 2 hour limit. I was told they started enforcing it after they developed a mobile pay app.

Let's see if they start chalking tires in NYC...
In non metered zones, chalking is the only way to detect and enforce.  Most violations in metered zones are detectable without chalking.

Where i work where there is a residential restriction they take a picture of your car every time they pass, and it automatically marks the location via GPS, if they come back and the car is still there you get a ticket, they have a map on their tablet where they see every spot on the street and if it's marked that car is parked there.
