Just entered the US with global entry for my wife and I at JFK but my baby didn't have it. So after we completed outs I told the agent or issue and she just sent us to the front of the line. Saved me over 40 min there.

Yes. It was an Amex loophole, not a Customs one. The $50 offer still exists, but you don't get any Amex automatic credit for it (it used to trigger $100 credit).

If that was their intention, there would a) be something, anything, announcing that combo promo/deal, and b) the internet wouldn't be littered with the fact notion that GE is $100 and Nexus is $50...

That's a good question.

A great question would be why they simply don't actually make it $150 (or something between $101-149) for the combo if they wanted people to pay $100+.

Just don't understand the motivation would be for them to be surreptitious about the combo being $50 (if you believe that's intentional which I'm having trouble with).
