Good question. I figured if he was just doing shehiya/chazarah, why not just use a blech. But could be I'm wrong

So Syrian poskim allow you to place food onto a blech on top of a fire on Shabbos? I just find this hard to believe as the shulchan aruch is more machmir than the Rama (who at least quotes adeah lehakhel about a certain form of chazarah) on this issue

If the discussion is placing cold items then, while I guess it is possible since I do not know all Syrian minhagim, I would be very surprised. Even for shehiya the Mechaber does not allow it to be touching the heat source even if covered.
