It seems like amazon has merged the no rush shipping option, with the your Amazon day option. When placing orders with eligible products, try switching your Amazon days around, you may see an option for $1 credit

What do you find works for you? Making it a later day in the week?

Also, I noticed I'm not getting offered the no-rush credits very often anymore - am I more likely to get it if I use amazon day anyway, or if I choose faster shipping in general?

It has hard to get for a while. They are now back on, add two prime items in your cart and you should see $1.5 on the amazon day delivery option (try playing around with the date). I believe 3 items is $2.25 and 4+ is $3. (it may only work for items shipped and sold by Amazon)
