The only video I got is from a smaller blast-off, so I'm not sure if you can hear the roar over the the wind and squawks. I'll put it on Youtube later and post it here.

Day 1
On the way we passed this guy, who apparently spent his days sitting on this perch in the middle of the largest pond:

The geese were gathered in tremendous numbers on the alfalfa field when we got there. All of a sudden, a blast-off larger than any we'd seen that day occurred:

The reason for this seemingly random panic became clear before long - someone else wanted breakfast, too:

After a bit the eagle gave up and the geese settled down again.
There was a fantastic segment on this dynamic (not specifically in NM, but same idea of predatory birds in migration rest stops) in BBC's The Hunt. If I can figure out which episode it was I'll report back.

Found it. BBC's The Hunt - Episode 6: Race Against Time (Coasts). The segment is from 31:15-35:55, showing millions of wading birds stopping over in the estuaries of Europe, on their way from their breeding grounds in the Arctic to their winter territories in Africa. You see a peregrine falcon (also known as the fastest member of the animal kingdom) hunting the waders. and the waders taking the same type of evasive action you witnessed in NM. Basically, by taking off in droves when the predator approaches them, they confuse it, and make it more difficult for any of them to be caught.
