Sixth Floor Museum devoted to the JFK assasination
Tour of new Cowboys stadium
Fort Worth Stockyards (watch a cattle drive...other "real texan" things)

Depending when you're coming and how much you want to spend you can catch an NBA championship game :)

Texas Torah Institute is yeshiva near restaurants and has minyanim.  If you are going to be in rush I would call wherever you are eating first and order food - much slower than in NY. When I go down there I like to just go to Tom THumb Supermarket which has koher takeout - fried chicken for I think 8 bucks

Yes, lots of good takeout at the Tom Thumb, including chicken, sandwiches, sushi, baked goods.

I know there's an Indian restaurant people rave about there.
