Anyone have success sous vide a brisket? Wanted to ask in the smoking thread but didn't want to sound like a sici
I did the smokeless brisket once sous vide. Was not super amazing. Also did corned beef brisket sous vide with a brown sugar glaze. That was amazing.

yup and its awesome!
ive heard many upscale restaurants have started it too.
they can keep many pieces of meat in various buckets at various degrees. when someone orders it rare or medium rare etc they can pull one from the right container and quickly pan sear it and its done.

In water, and therefore at temperatures where the plastic doesn't melt or break down.

According to noturbiz u can't keep a rib steak in there for more then a hour so I'm not so sure how this is true

kk thanks. I've gotten Pastrami from scratch down pretty good. Next I want to take the pastrami and Sous Vide. I remember watching Nathan Myhrvold once do that and it looked unbelievable.
I'll take that Pastrami recipe.  Care to share?

Where does sous vide come in when is comes to a pastrami? What step are u replacing with sous vide? The smoking or the steaming?

If I were going to sous vide a pastrami, what I would do, is cure it, rub it, sous vide it, then smoke it.  So basically, use sous vide to replace the steaming, but also flip the order so that steam and then smoke.

Not saying it wasn't but you can't know if in fact 3 hours is much better unless you try it. Frankly I'll take J. Kenji Lopez's word over your one time experience.
