For that u could probably stay outside of grand canyon too.
There's very little lodging within an hour of the grand canyon and the grand canyon is out of the way for DEN-LAX.

Well worth it over Zion IMHO.

Have you been to either?

But the lodging is further away

It is 7 miles from South Rim, http://www.nps.gov/grca/planyourvisit/lodging.htm

A nice hour walk on Shabbos.

So u go to the center on thursday and friday, and shabbos stay at the lodge 7 miles away. You will still have the great scenery and relaxation as u do in GC itself.

There is no great scenery 7 miles away from the canyon.  The canyon is the whole thing.  Lots of desert though.
I would assume the scenery a mile from Zion would be much nicer than the scenery 7 miles from the canyon.

Wikitravel writes it is just 2 miles from the entrance to the GC. And the whole town is surrounded by a scenic national forest area.

I was there. There is NOTHING in the town. A tired tourist town with an IMAX. Can't think of anywhere I'd rather less be for Shabbos. Nothing to do there. It's two miles from the park entrance, but many miles to get to the canyon from the entrace. About a ten minute drive. Fine for during the week. Useless for Shabbos

Cancellation in the Grand Canyon lodges is 2 days prior, so they can open up.
From 08/20 and on it's wide open...bad timing on your part for the peak season.

Highly unlikely that they will open for 3 days over a weekend. You could stay in the campgrounds.

Where do you get these facts?  It opened for me for a weekend in the past.
When cancellation policies are generous people make speculative bookings.
