The Dont's
Don't play with the food on the grill. Flip it once (or twice if need be), that's all.

Be careful. Once your grill gets used you can have one heck of a grease fire and destroy your grill.
I singed my face as a 10 year old (but that was leaving fires on while closing tank valve instead of closing valve then lighting new fire to burn out excess)

Do you ever give them a good cleaning or just a light brush down every now and then?
something in between.  i try to give a decent scrubbing but only with very hot water.  no soap

I usually just heat the grill really high and then brush it
I also use an oil spray before I put down food so I have less crap sticking to the grates

Because you're not supposed to use the same pot for fish and meat

Meat and fish may not be mixed directly but not due to "kosher" requirements per se. To the letter of the law it does not need separate utensils. Some have a custom to use separate pots to cook them. When grilling the residue left behindcan make it be considered mixed.

That is what I was wondering. If I cook meat one day, what has to be done to the grill to cook fish the next day if anything?

Ok, so u post something.
Last i checked i am the OP and i started here with my ideas ;)

But i do have another idea. Cube a few onions amd sautee with bbq sauce. Can be done before grill and just leave on the grill on top grate to keep hot. We use this to add a nice touch on hot dogs.  You can make it a bit more interesting by adding small pieces of pastrami cut up into the mixture. But add pastrami only when keeping on the grill, not earlier.  This elevates a hot pretty easily

I love throwing on some hard salami or pastrami to grill while waiting for everything else to get ready
for the salami ill just put a drop of bbq sauce or even nothing

On Pesach my family doesn't use any spices, so I let some veal chops soak in red wine and a bit of olive oil. Then I did a rub with course salt and ground coffee. Cooked it on the grill. It was out of this world.

Ended up cooking around 50lbs of veal over Pesach.

Any tips for salmon?
We bbq salmon on a cedar plank pretty often. Just lightly salt and pepper the salmon and after cooking can sprinkle with lemon juice. The smokey flavor from the cedar plank is most of the flavor you need.

Also might help in terms of the kosher laws if you are cooking the salmon on a cedar plank and not straight on the grates
