The Dont's
Don't play with the food on the grill. Flip it once (or twice if need be), that's all.

Be careful. Once your grill gets used you can have one heck of a grease fire and destroy your grill.
I singed my face as a 10 year old (but that was leaving fires on while closing tank valve instead of closing valve then lighting new fire to burn out excess)

Any recipes to cook brisket on a charcoal grill? Looking for something direct heat not a 7 hour ordeal. Does that exist or should I use a different meat?

I am not big on slow cooking. My neighbor does it all the time and has a smoker. If it was me I would start with the cheapest cut of meat. Recipes here and online are great but it is about trial and error.

I use that recipe on oyster steak but cut it down to 1/4 cups and omit s&P.

tried last night a new skirt steak marinade which was a hit

3 tablespoons soy sauce(obviously for kosher meat you want to use a bit less do to salt content. this is just the recipe)
2 tablespoons honey
2 tablespoons chinese black vinegar or balsamic(i left this out and it was still yum)
black pepper
2 garlic cloves crushed(i used frozen cubes)
2 tablespoons oil

mix all ingredients and marinade for at least a half hour. grill on high heat for 3-5 minutes each side.

i served it with shiitake mushrooms that were sauteed and then tossed in a little teriyaki sauce

Almost exactly Same idea.
actually one huge difference is the honey to soy ratio. also no salt in this.  with salty meat i think it makes a big difference.  but otherwise it does look similar  but now you know its good on skirt steak ;)
