From the way the conversation continues it sounds like you are actually advocating picking who to ask based on their answer.
Not advocating anything. Stating facts.

My SIL just mentioned yesterday, that when he was in Yeshiva in Eretz Yisroel and inquired, he was told that if he prefers to keep two days he should ask Rov A, and if he prefers to keep one day he should ask Rov B.
I've been waiting over 5 years with bated breath for someone to say that!

That sounds really strange. Don't think Halacha works like that

That doesn't really answer much. What could someone in the holy land answer that a Rov in CLE could not, if it were simple clear cut ruling?

There Rebbe has told different people different things, some in a more clear way and some in a more indirect way.
In the Sefer נתיבים בשדה השליחות Rabbi Raskin gives a very good overview of the different answers the Rebbe gave to people as well as things mentioned at public gatherings and basically explains most of the seemingly conflicting answers of the Rebbe as well as parts of Shulchan Aruch Harav as each referring to different situations.

My understanding of psak is that one should not go shopping specifically for the answer that one wants. One should have a Rav/posek of whom they ask questions and follow his psak

That yom tov sheini is a punishment for not keeping yom tov rishon and not a lechatchila. And as the pnei Moshe explains, when you punish your kid for not cleaning up and they need to clean up double, they don't get credit for cleaning up double.

You are absolutely correct. But what does one do when his Rov/posek refuses to give a psak? Or if instructed to "ask a Rov in the holy land", at which point one can (possibly) pick and choose out of several competent Rabbonim?

As I mentioned above, we don't really care about credit.

And even though it is מפני חטאינו גלינו מארצנו as we all say in מוסף, in a certain way it is קלקלתנו זוהי תקנתנו, where we merit to have another day of יו"ט. I see it somewhat akin to what Rashi says about שמיני עצרת.

But I guess in order to really appreciate it, you need to be connected to a Rebbe.


ETA: If one can call having another day of יו"ט a "punishment", I will take as much of that "punishment" as possible.
