Yes it was hot. I didn't take the temperature
As long as it's sill hot, it should be fine.
We leave the soup out (w/o the flame on) for a good few hours after it's made before putting it in the fridge, as it takes quite a while to cool down. (Obviously, the timing for cooling down will depend on the size of the soup...)

Put up the soup last night and it was simmering on the fire when I went to sleep. Woke up 7 hours later and it wasn't bubbling anymore. Do I have to be concerned for spoilage?

Hack: put the pot in your kitchen sink and fill the sink with cold water and you'll have cool soup in about 15 minutes!
(don't do this in a plastic Pesach insert)

Don't ever expect your under the counter sink to hold a sinkful of water unless you are certain it has enough support for that. Hatzolah has calls every year for people burned when the sink they are kashering collapses and boiling hot water bursts all over the place.
Also, this IS a sink full of water and not just a pot of soup if you are using a sinkful of water to cool down your pot.

I never weighed my dishes. But I'm sure that when the sink is full of dishes, cutlery, glass stem ware etc. weighs more than a sink full of water.

Sinks that can't hold the weight of its volume in water, is imo, either a junky sink, or a bad installation. (I'd imagine that most people have decent sinks)

Undermount sinks can be installed with Epoxy or with additional support mechanisms, epoxy will not be able to hold too much, but the bigger the sink the more it should be able to hold.
My sinks are also supported by the cabinets as it consumes the full width of the cabinet

This is not an opinion. It is a fact that (most) undermount sinks are not installed to be able to hold that much weight. It is a fact that this is not only when it is faulty installation. It is a fact that a sinkfull of water weighs quite a bit more than all of those stuff. It is a fact that

It is a fact that this thinking is foolhardy and dangerous.
