Cholov Yisroel:
If you go onto Kosher Panama Website you can search for Cholov Yisroel by entering Jalav Israel in the search, just be aware if the site lists Jalav Israel and Lacteo in the description, the establishment may have both CY and non-CY so be aware and double check with the staff.
SuperKosher also had a nice selection of CY breakfast/snack/frozen items available.

There is a local chalav yisroel that isn't up to everyone's standards. It isn't up to Chabad as they use a lower kasherimg temperature than the alter rebbe holds.
This is what local chabad down there told me. Don't hold me to any of it please.


Synagogue:

The Jewish community in Panama is mainly in Panama City in the Punta Paitilla area.
You must bring your passport with you to enter the shuls. You can bring your passport over during the week if you are not staying in the eruv. They will make a copy of your passport.

Sinagoga Beth El – Orthodox, Ashkenazi. After Shabbat morning services, they have a full sit down Kiddush lunch.
They also serve breakfast after weekday shacharit.

See if you can figure out which terminals the flights are likely to be arriving/departing from. If you have to go from old to new or vice versa that's gotta be a no (probably is a no even without that).

I know the winter season is coming up in Panama and I just want to share the experience I had.   
I booked with one guide (my brother was there the week before and used him)
He was not available for most of the days so he booked me with another guide. Both of them were absolutely amazing, the service they offered was something that would cost 5x the price anywhere else. Here is their contact info and they can easily be reached on WhatsApp Nestor Andrade T & S (+507 6949-5330 ) Horicio Panama Guide (+507 6647-0139).
Here a overview and pricing I received all are for 2 people
Monkey island tour - $100 pp
Private tour including pickup (stop for breakfast) and the boat ride
San Blas tour $140 pp, group tour we had a pickup truck with another couple
This includes the drive to San blas and the boat ride. Make sure to wear a crazy amount of sunscreen we put on a lot and we got burnt to a crisp.
Embera Village $110
Includes pickup boat ride to the village and hike to a waterfall.

We stayed at the JW Marriott regarding shabbos to get up from the bottom level to the lobby there is always someone there who will help you up and from the lobby as well. Going down we requested the bellhop come get us or we just found someone, they also have a stairs that you can use.
Overall they were extremely helpful and aware and we never ran into issues.

When I was there last Feb we were out biking on Amadore Causeway. On the outside of one of a building we stopped near I noticed a poster about UV index and looked it over quickly. Something like this:

Most of these charts go 1-10, with some showing 11+ as extreme. Curious, I googled what the UV index was in Panama city at the time. The daily max was 12 for every single day we were there.

We were in Panama last week. Just wanted to share that we used Barefoot Panama tours for a private Monkey Island/Indigenous people tour. Our guide Rafael was beyond amazing.

Update: hello from Panama, courtesy of Copa.

I ended up booking a flight with a 39 minute connection (different itinerary, that was the only option). Outbound flight was delayed 45 minutes. Was promised by 3 different people that Ops is aware that many people on this flight will misconnect, so they'll hold up everyone's flights.

Ended up landing early, and got to the gate in time only to see that these morons - who knew that we're coming - actually closed the gate early and pushed off right in front of us.

Astounding.

I got a Claro Sim at a small convenience store in the city for less than $10 including high amount of data.
At the airport it was very expensive, IIRC $60.
