What type of wine do you buy? I feel it should be substantial

Wine (non kosher) is halachacly problematic I believe.

Get him some pralines (not ones that are given out in this hotel (!))

+1,since giving non kosher foods(like meat and fish)is assur lekulei alma,yayin stam is also assur lechumrah,better go with something kosher.IME non jews love the kosher stuff!

But a bottle of wine isn't vadai assur, it's stam yeinam (AFAIK) which you shouldn't drink, but I don't know that it's assur behanah.

The issue isn't hanaa. As I said there are few issurim that are I"H (Basa bchalav, chometz, and yayan nesech are the only ones I can think of offhand). The issue is schora in ochel that is assur bachila alone, even if it's not assur bhana. Sechora includes gifts, payment, and feeding workers (including if a jew is running a nursing home/school for non-jews and wishes to feed the residents/students non-kosher). Stam yaynom is only drabanan, but has different halachos, so I have no clue if it falls under the same category, or has different rules.

You can check up YD 117 for more info, but I didn't have the time/effort to research in too much detail.
