Once tried homemade with an ice cream maker and was never satisfied. I'm thinking I have to use stabilizers

They add powdered milk to at least some but not sure if that is what you are referring to.

Not that.Not exactly that, either, but I think it may have been cooling down the milk right away before pasteurization.
