if you're referring to my mileage wallet, I don't really have much other hotel points, I have 300K or so AA, 75 UA, 75 citi and think that's really it. my actual wallet wants to stay in tact for a vacation. I don't want to spend a lot of money
A trip to BOB or Maldives is expensive even though paid on points.
Transfer to hotel is expensive then food upgrade to owb etc.
If you look spg specific St. Regis in kauai might be a nice idea but not sure if it's worth the 30k points a night

Maybe open a miles card for flights to cun and there are some hotels cheap enough on points that one hotel card may do the trick

No. It's 20k for the standard room there. Don't think you can book an OWB with just points; you'd have to pay for the upgrade, but cmiiw.

As for flights, I know you said you're going from NYC area, but you'll probably have a hard time finding availability to MLE for this winter break. I just booked for March from Philly and there was a lot of availability on Qatar (bookable with AA points), so you may want to think about flying out of other airports that are close by. Routing from Philly happened to be good - one short stopover in DOH in both directions. 135k per person RT in business.

I went in May, had rain for an  hour on a couple of days. Other than that was gorgeous.

They said rain everyday in Aug. I just came back had 0 rain. Was sunny and 85 everyday.

Hotels not even imp   ideally somewhere easy to fly to, and get to. Anywhere in Canada? Pref on east coast?

It seems an in between time for most places. No snow yet but already missed the fall leaves changing colors.
