Forget the milk and apples, I'm inundated with cherry tomatoes which my (any) kids won't touch. So any recipe ideas which include milk apples and cherry tomatoes would be appreciated
I didn't read through the whole thread, but in case it wasn't posted yet, I've been making tomato Confit weekly!
We also kept getting cherry and grape tomatoes, this works with either.
There are different versions available (just Google) here is the method I used with great results.
Take a pan (for oven), put a layer of tomatoes to cover the whole bottom. (Choose pan size accordingly).
Take a few cloves garlic, smash them a bit and stick them in between some tomatoes. Add favorite herbs you have around, fresh is better, dried is fine- oregano, basil, thyme, rosemary etc...
Drizzle a lot of olive oil, I try to cover at least half way up the tomatoes (harder with bigger pans).
Sprinkle with salt (ideally kosher salt or Himalayan...)
I put in the oven at 225 for around 3 hours or so (other methods are higher heat for less time).
Optional- I've added a few rings of jalapeno for some heat.
You can use it fresh or refrigerate for weeks.
Some ideas:
Top cooked pasta with it and heat (awesome)
Top foccacia
Salad topper
My favorite is to blend it all on Friday (whatever is left) and it makes the best tomato dip!
