We have about 3 gallons blue, and a gallon each red, green, and chocolate.  Blue is the only one we don't ever buy.  Gave a gallon to a neighbor yesterday; she said she'd make pudding.

Blue (and green) milk is one of the biggest political scams of our lifetime. Since when is milk with a higher carbohydrate (sugars) concentration any better than milk with slightly higher fat content?

What is the issue behind this thread? And why is it in the Coronavirus board? Is there a milk shortage somewhere? I certainly haven't seen any shortage in Lakewood, BH.

Schools are giving out with their lunches.   And i imagine legally they have to give a certain amount.  That amounts seems to be like what a cow can produce in a week ;D

I personally drink green because I prefer the taste, but just for fun, I checked the Nutrition Facts, and carbohydrates are the same on red and green (12g), all sugar.

It's not a joke, we sat down and tried to look thru all the recipe books for what we can make with milk. So far we got:
Pancakes
Chocolate milk/hot chocolate

With all that whole milk you can make cheese!!!
You can make ricotta with just a bit of citric acid or salt and you can get cultures (3x re-culture for CY) online for other cheeses.

+1. Since when is fat bad? Full fat dairy products will fill you up for longer and prevents you from eating unhealthy alternatives when you get hungrier faster because you went skim. A reputable gastroenterologist pointed this out to me awhile ago and I haven't looked back since. Was very happy when gevina finally came out with a cholov yisroel whole milk greek yoghurt.

Nutritional "facts" are total fraud.

Case in point, look at the dietary fiber content and % of recommended daily values on these two packages (also why are serving sizes different on these very similar products?):

What you see on the milk packages might be a result of rounding. I've seen packages that clearly had more sugars on the blue vs red.

I'm sure DDF health & nutrition resident expert @chevron will back me up on this. It's a simple rule of physics, if some of the volume is occupied by fat, there will be less volume of other content (including sugars). It is also know that fats slow the absorption of carbs. That's a good thing.

If I had a nickel for every time I've heard that, I'd be rich, but it makes no sense.  A cup of skim milk has no fat, while a cup with half red milk and half water does have fat.  I would do a taste test, but I hate the sliminess of the fat.

So just use water with a tiny drop of milk for color. The amount of fat will be so negligible that even the most politically motivated fraudulent "nutrition facts" authority would count it as 0.

This. They are going based on weight and then converting to cups. So if they both used the same weight you would have an odd cup measurement (do you want the serving to be 1.356754 cups?)

And regarding your question about the dietary fiber, they give measurements based on whole numbers. And the percentage are based on the actual content (so one could be 1.7 and the other 2.2, which would account for the difference

Yet they are using different weights for serving size too (39g vs 40g). So your theory might be flawed.

That's exactly what I was addressing. If they both used 40g then the corn chex would have 1.28.... cups in a serving

Do you truly believe there is no difference in flavor between skim milk and water?  What I failed to mention is that 95% (or more) of what I drink is skim milk and water (not mixed), preference leaning significantly toward skim milk.  They taste nothing alike, and that's ignoring the other components of milk.  While I may concede that there's likely more sugar in 8 oz of skim milk than 8 oz of red milk, because the volume of milk vs. fat is greater (and let's be clear, the milk we get has had the fat removed and then added back), the small difference is not make it or break it, if not insignificant.

Baked apples?
You can even do that in the microwave. Dice into about .5-1 inch pieces, put into a bowl, sprinkle some cinnamon, and microwave for 3 minutes.
Some varieties of apples do better than others (like all cooked apple recipes)

Don't get me wrong. I definitely read and pay attention to these labels, but I think the system is highly flawed. In the EU and EY IINM they have the values per 100g.

when I was in yeshiva in EY, the yeshiva was floating in debt they hired someone to make `seder`,
1st thing he did was cut on the milk, 'crazy everyone drinks a full cup of milk, even at home you dont do it' so to limit consumption he filled a bucket with half milk and half hot water so it will only be good to add in the coffee

the bucherim complained that the farmer that sells to tnuva mixes half milf and half water, then tnuva does the same, and then yeshiva mixes half water, only to have some in the coffee and then you need to wait a half hour to eat fleishig

eventually he changed 1 bag per table

That seems to be true - not a ton of regulation on the data - I think you can safely assume that calories are 20-30% underestimated

Do you need pride of the farm? The difference in taste is tremendous.

Both need peeling, no? We've been doing applesauce but that's about 20 apples a week, we're getting up to 72 apples a week for weeks already

I've been dehydrating apples. (and other fruit)
I use a silicon mesh dehydrator sheets spread on my oven racks.
Wash the apple.
Remove the core. (I have a 'corer'.)
Slice, not too thin. ( I slice across, each one has a hole.)
Lay in one layer on the sheet-covered oven racks.
You can sprinkle with cinnamon. Or cinnamon and sugar, but it doesn't need it.
180 -200 degree F depends on your oven.  Also, some parts of the oven may be ready earlier.
Keep the oven open a bit for the humidity to escape.
3-6 hours. Depending on temp, oven, thickness.
You want them slightly moist, especially if they're eaten within a few days of making them.

My dehydrator sheet are something like this. (https://www.amazon.com/dp/B07J5HXTGR?tag=cl03f-20&linkCode=ogi&th=1&psc=1&smid=ATVPDKIKX0DER) I can't find the exact ones I bought, but I fit 2 sheets on each oven shelf.

Neighbors who don't have kids in school getting lunch would probably appreciate your milk.
I have my big yeshiva boys home and am going through milk like I haven't since they were in elementary school.

the bucherim complained that the farmer that sells to tnuva mixes half milf and half water, then tnuva does the same, and then yeshiva mixes half water, only to have some in the coffee and then you need to wait a half hour to eat fleishig

Iím not so sure about that. They sell 2/3 less calories grape juice, which basically means ď2/3 waterĒ. They claim they add no water on the label of the 100% grape juice.

Not sure this is true. IIRC they use a different type of grape which contains less sugar.

Possibly the difference between the Glass bottles (pure grape juice) and the plastic bottles (reconstituted).

In NY they just added Taanug. I wish they would add Unger's - the best quality of all the kosher brands (it's Malt-o-Meal special run with a sticker).

They both use Concord grapes, the only difference in ingredients is that the light lists water and the regular doesn't.

As I pointed out. Also the non-lite has water added (INGREDIENTS: GRAPE JUICE, JUICE FROM CONCENTRATE...). IINM only the glass bottles have no water whatsoever (and is not Mevushal) which is why I give that one at the Seder to my kids that don't drink wine.

Granted there is concentrate but the light lists plain water in addition. IINM that is the singular difference between regular and light, the water added.

Is "juice from concentrate" the same as "grape concentrate"?

I read "juice from concentrate" to be reconstituted juice.

Why would they do this differently in the plastic bottles than they do in the glass bottles?

To use up the milk:

Chocolate Pudding 

Mix all these together in a pot:

5 Tablespoons cocoa
6 Tablespoons sugar
3 Tablespoons cornstarch
1/4 teaspoon salt

Slowly stir in:

2 cups milk (red, green, blue... whatever you want to use up)

Cook over medium heat, stirring all the time so it doesn't stick and burn on the bottom.  When large bubbles break on the surface, let it boil one more minute.  Take off the heat and immediately stir in:

1 teaspoon vanilla

Cool and chill in refrigerator, even though you're tempted to eat it right away, because it really tastes better when cold. 

If you don't like the "skin" on top, cover it while it cools.
If you DO like the skin, keep it uncovered while cooling and chilling.
If you LOVE the skin, pour some while hot onto a large plate, and you'll get a large plate that's almost entirely skin when it cools.

This makes about 4 adult servings.  You can easily double or triple the recipe, but I recommend trying it first this way, then adjust the recipe to your taste. 
If it's too intensely chocolaty, decrease the cocoa to 4 or even 3 T. 
If it's not sweet enough, increase the sugar to 8 or 10 T. 
If it's too thick, add 1/4 - 1/2 cup milk.

Variations:
1. Instead of vanilla, try almond or mint flavorings.
2. For a higher-fat creamy taste, stir in 1-2 Tablespoons unsalted butter at the end, together with the vanilla.
3. For reducing quarantine-induced stress, stir a little rum into the pot with the vanilla, or pour some into your own bowl just before eating.

Not to mention the adverse effects of all the fructose in those apples. They should be providing more proteins and fats, and less sugars and carbs.

Now if only we could reverse engineer all that milk back into an actual cow, we might be able to alleviate the beef shortage while getting some good protein and vitamin B-12.

I get them for entertainments sake, keeps the kids guessing and we get to leave the house. Little value in the food content. Where as food in shabbos box had some value to me. Friday

This doesn't help with the milk and apples, but I had a similar problem a few weeks ago with cherry tomatoes.  I saw they weren't going to last long, so I chopped them up, cooked them with other vegetables and tomato sauce, till they got good and soft, then made shakshouka out of it.

It's neater to mix in the milk bit by bit, stirring it into a slurry, and only then adding in the rest of the milk.
But sometimes I skip that step, and just dump the milk in all at once, because I believe that by starting the milk cooking right now, I will be able to eat my pudding that much sooner.   :) It will all slowly dissolve eventually, as the milk gets warmer and as I continue to stir it.  This is American cocoa, so I don't know if this would be true for Israeli or European cocoa.

I didn't read through the whole thread, but in case it wasn't posted yet, I've been making tomato Confit weekly!
We also kept getting cherry and grape tomatoes, this works with either.
There are different versions available (just Google) here is the method I used with great results.

Take a pan (for oven), put a layer of tomatoes to cover the whole bottom. (Choose pan size accordingly).
Take a few cloves garlic, smash them a bit and stick them in between some tomatoes. Add favorite herbs you have around, fresh is better, dried is fine- oregano, basil, thyme, rosemary etc...

Drizzle a lot of olive oil, I try to cover at least half way up the tomatoes (harder with bigger pans).
Sprinkle with salt (ideally kosher salt or Himalayan...)
I put in the oven at 225 for around 3 hours or so (other methods are higher heat for less time).

Optional- I've added a few rings of jalapeno for some heat.

You can use it fresh or refrigerate for weeks.
Some ideas:
Top cooked pasta with it and heat (awesome)
Top foccacia
Salad topper

My favorite is to blend it all on Friday (whatever is left) and it makes the best tomato dip!

No guarantees for this week but I heard that last week there was initially a lot of traffic, however there were many extra boxes - so coming towards the end of the distribution might actually be the best strategy

OOT grocery stores run out of CY (aka super kosher) milk. Often its only delivered once or twice per week and sometimes not even..
Growing up in DAL 30 years ago, CY wasn't available. I believe we got it a couple of times per year from Chicago. After that in in STL 25 years ago, we got it once a month delivered to someones house.

I guess you never went on vacation for two weeks and had three bottles of milk in the fridge?
 same reason I would freeze my loaf of bread I freeze my milk if I have extra and don't want it to go to waste.

The question was about "a person who buys ... milk".

Though maybe the solution is to move to EY, IINM they have the colors reversed there, blue milk is whole milk while red mile is skim milk over there. I'll take Israeli blue milk in exchange for American blue milk.  ;)

BY in Chestnut Ridge usually has food pickup on Wednesday. You can also go daily to 201 route 306 from 11-3 for any food leftover from their drop off. They also have milk available daily.

So, I've got an idea for the overload of milk!

Drum roll please...Condensed milk.

As the name suggests, it's basically milk that is condensed to about half it's original volume. It is very simple and easy to make, all you need is sugar and milk. There are many recipes that use condensed milk, from ice cream to cakes to Dolce de Leche. I've never actually tried any but I think it's about time.

Fudge, too.

I had homemade fudge about a decade ago, and didn't see myself wanting more for at least another decade, but it's an interesting idea for the milk in my fridge.

Pineapple Sorbet
1 pineapple
1 cup sugar
1 cup orange juice

Chunk the pineapple and freeze it overnight.
Then put it in the food processor with the sugar and oj. Process (with the s blade) for a really long time, until there are no chunks left and it's very creamy.
Put back in the freezer (or eat right away :) ).

Curious how they make lemon sorbet.

We make it with fresh lemons that have never been frozen, sugar, and water, put in ice cream maker.

Every time we get more milk we put some in the fridge and some in the freezer, so we always have fresh milk. One day we'll figure out what to do with the milk in the freezer.

I used to think that frozen milk has a lighter taste than fresh. I did a taste test recently, turns out if the milk is completely defrosted I can't tell which one is which.

You need to fully defrost it and shake, otherwise the part that defrosts first is a little watery

My milk buying guide:

Red = Milk
Blue = Diluted milk
Green = Diluted water
We go by this:

Red: good for rich treats like coffee, homemade ice cream, and chocolate pudding
Blue: no purpose, mix red+green if you must
Green: best for drinking; thinnest consistency, so gets quite cold

It was tough convincing anyone here to use the endless blue milk even in cereal.  I have a young son that does NOT like water. "Milk or water" is 100% of the time answered with "milk," which usually means green around here.  Then again, over the summer he drank blue, and if we have red but are low on green, he'll get straight red.  I don't understand what purpose the "hating" on green serves.

Any good recipes?
Custard is complicated and not possible spur of the moment.  For simple vanilla ice cream: whisk a cup of whole milk with 2/3 cup sugar (adjust to your taste), with a pinch of salt if you'd like.  Add 2 cups heavy cream and 2-3 teaspoons vanilla.  Whisk, chill for an hour in fridge, then pour into ice cream maker for 15-20 minutes.  Best flavor addition: add a few (3?) tablespoons of seriously strong coffee (not instant, unless you actually like that flavor), use 3/4 cup sugar instead of 2/3.  Try making a milkshake out of that. Best coffee drink ever.

I grew up on green. It does not come into my house. We deal with blue when it's free, because it's passable in cereal. Rich treats like coffee, homemade ice cream, and chocolate pudding deserve heavy cream, and no less than half-and-half.

I sometimes use a tinfoil pan but you have to watch it closely because it'll burn or bubble over quickly.

Does hate ever serves a purpose? When you open the fridge and all the milk is gone, but there's a green bottle of fake milk, it gets you annoyed. Happens 100 more times and you start to develop a venomous anger towards all things green.

But no price controls on the other sizes.
So kosher milk comes in  half gallon and quarts.
So they can cover the price of kosher supervision.

Anyways, Costco CY cheese is limited to some mozzarella cheese. No cottage, farmer or American cheese.

Anyways, Costco CY cheese is limited to some mozzarella cheese. No cottage, farmer or American cheese. 
Between CY mozzarella and muenster at Costco for less than $5/lb, that takes care of most of our cheese needs. Just need them to start carrying milk.
I'd be surprised if CS cheese exists for much less than that.

Cheese is complex halachically. While some authorities permit drinking chalov stam (and using it to make cheese), NO authorities (to my knowledge) allow gevinas akum. A Jew MUST be present during the cheese-making process.

Even non-cholav-Yisroel cheeses must be made under the supervision of a Jew in order to be certified Kosher. There are a number of brands that make cheese with non-cholav-Yisroel milk, as it is substantially cheaper. But they all are Gevinas Yisroel.

I'm not a rabbi but this is my understanding of the situation.

Yes, I lost confidence in expiration dates on milk when we lived in Brooklyn, milk would go bad close to a week before the date, since we moved to NJ and started using POTF I would drink it without smelling up to a week past the expiration date

Haven't been in years either, but considering that Instacart typically has a 15-20% markup (other than 0% at Heinens), I'd assume that to be the case.
I think POTF 1/2 gallon is about $3.40 at Boris and would assume Dave's would be around there? Though Ungers is much cheaper than Boris for yogurt.

I must point out here that if you eat cottage cheese , you eat friendships (large curd), not breakstones. Sorry

FWIW, when they used to sell POTF gallons in ShorRite they were actually cheaper than the regular milk gallons. I used to see non-Jews who figured that out buying POTF.

It is. They have special machines called cows that process grass and turn it into milk.

No. Many ShopRites, especially in jewish areas had a section called "Kosher Experience" where they sold products specifically geared toward kosher consumers. I have no idea why the POTF milk was cheaper than regular milk.

That type of discrimination is protected by one of the constitutional amendments (I forget which one). It's is the freedom to rearrange products in stores in order to maximize the $ yield of consumer shopping trips.

Most annoying part of shopping at Costco. They are super Mehadrin at this.

Which is always CY regardless of the label, it's not worth it for them to kasher between runs so they always have a mashgiach tmidi, AND NPGS doesn't sell it because of .......

Source? I remember many years ago being told in Lancaster that only if it has a Hebrew date stamped it's CY.

My chavrusa said he spoke to one of the Mashgichim. He said that it would be too complicated to do some runs CY and some not, because they would have to kasher some of the equipment (like pasteurizers) between runs (because of those who are makpid on kielim). So, they just have it CY all the time and only label it POTF when POTF needs it . Otherwise, it's just labeled Kreider's.

Cleveland occasionally gets it without the potf label. They send along a letter from the star k saying that it's certified

Not the case although over corona it almost happened that the cows ran out of milk and they would have bought milk for Krieger label from other farms.

Maybe the Hebrew date was a way to guarantee the milk came from their farm.
