I didn't decide I'm doing it yet but went through all formalities, the answer to your question is why not? And apostille costs may push me off

In NY it’s $10 per document, GIYF for instructions or for other states / countries. Ignore the services that are happy to charge you $150+ for their help.
Some documents may need to be notarized before submitted, so that can cost a few extra dollars.

Is there apostille delays due to covid? are they even handling it?
Can one apply for residency in more then one EU country

I did the German version and it was a great decision. No negative effects, yet.

What kind of documentation is required to prove that you are a decendant?
ETA:
My grandparents are from Khust, Satmar, Sighet, and Veretzky.

Due to the information you provided about your ancestor, we would like to point out again the prerequisites for being eligible under the new law:
You must be a descendant of former Austrian citizens or persons who were citizens of successor states of the former Austro-Hungarian Monarchy or stateless at the time, but had their residence within the borders of the present Republic of Austria, and who were forced to flee from the territory of today’s Austria before May 15, 1955, because they had to fear or suffered persecution by the NSDAP (National Socialist German Worker’s Party) or other authorities of the so-called “Third Reich” or because they had to fear or suffered persecution because of defending the democratic Republic of Austria
Since your ancestor seemingly never lived on the territory of the present Republic of Austria, please recheck the respective prerequisites above.

I filled out the questionnaire and then contacted the embassy.
I explained my family history to them. I figured it is better to ask them before going through with all the legwork.
