I was looking a place where I can see what letters mean at Lufthansa and this is what I found:
Let me try (no guarantees!). It is mostly the same as UA. Differences in bold.

 A = Discounted Fare First Class. Round The World First is booked in this class.
 B = Almost Full Fare Economy with minimal restrictions
 C = Full Fare Unrestricted Business Class
 D = Discounted Fare Business - used also on all Business Class *A RTW fares
E = Lowest Economy fare domestic/intra-European. Changeable against a fee, though
 F = Full Fare Unrestricted First Class
G = Economy fare, some restrictions. Often used for group travel.
 H = Higher level Economy Class with few restrictions.
I = Business Class Award and Upgrade
J = not in use
K = Discount economy fare with lots of restrictions. Typically used for intra-German oneways
 L = Discount Fare Economy with a lot of restrictions
 M = Almost Full Fare Economy with few restrictions, also used *A RTW
N = Non-revenue Economy Class
O = First Class Award and Upgrade
P = Non-revenue First Class, but not in use (?)

When you do not pull a seat from an inventory display. Long selling is when you instruct the computer to book a seat on a specific flight/airline. The command is much longer then the first way so its called a long sell.

Whats so special on doing that on EK in J then? Can you not normally have an airline book a specific flight/airline?

Sometimes, the agent doesn't show partner availability even when there is. The agent can manually request that seat, called a long sell, which generally works to find and book the seat that's not showing.

And you know ahead of time if it'll show or not / if its available or not? Or you look online, if you don't see it you call and hope they find something they can book manually?

To my knowledge, I don't think that's possible because there is no "standard" on all airlines. Every airline has different letter arrangements.
