Can anyone explain what it means on when it says "kitchens are glatt kosher (chezkas kashrus)".  What does it mean Chezkas Kashrus?
That they cannot certify that somebody staying there didn't trief it up, but since it was once Kosher we don't know the status changed - the concept is called חזקה דמעיקרא

The Gemara says we learn it from the fact that a house with צרעת remains Tahor until such time as we know for a fact the צרעת appeared, even though it is quite possible the צרעת was there and the house was טמא earlier.

There is a common misconception that Kashrus is about the absolute knowledge in absence of doubt, whereas in reality it is only about whether or not it is considered kosher in case of doubt.

If you would require absolute knowledge, many parts of the Torah would become inapplicable, for example we know that we can rely on Roiv, the majority, since otherwise we would never know who a person's father is & it would be impossible to execute all mitzvah pertaining to paternity (there are many punishments involved in mistreating parents which we can only prosecute by relying on the fact that most intercourses are with one's husband).

We also know that in certain instances even 1 witness is reliable, from the fact that otherwise it would be impossible to rely on one's wife in regards to her purity.
