I can get the Mandarin Oriental for $700
check out Jetsetter.com they have a bunch of hotels with rooms those nights

Up to $1000 a night needs to be either st regis ,aqualina or fontainebleau

Check VRBO for the fountainbleau - I don't think they officially have any rooms left but maybe you'll find a private owner
