How long do you need there?

also should i rent a car in milan and park by the water taxis in venice(since my return flight three days later is from milan?

Park Hyatt is great. 3 days are a lot for Venice, spend a day in Milan. Trains are much faster.

Short stopover, not leaving the airport - anyone have success ordering in advance and getting one of the restaurants to deliver to the airport?

3 days are a lot for Venice, spend a day in Milan.
You can do a day trip from Venice out to Padua and/or other close towns.  There's some Jewish history.
