I booked the Air Zealand Business Class glitch from earlier this month for 3 weeks in Australia for Pesach time.

Any thoughts ideas suggestions etc are appreciated! 

I land on 4/16 at 11am into MEL and depart 9:30am on 5/5.

The general framework that I am building around is do something 4/16-4/18, I am going to a friend for the sedarim in Sydney that takes up 4/18 at night to 4/21.

Then fly somewhere else for Chol Hamoed which is 4/22-4/25, spend 2nd days either back in Sydney by friend or anywhere else in that area, will likely contact the shliach in Brisbane, Cairns, and Gold Coast to see if they have meals I can crash for 2nd days. Also there is a program I can join in Gold Coast https://aussiepesach.com/, but that is $3k for the last 2 days. Ouch.

Then go somewhere after Pesach, I have 4/28-5/5.

Itin 1:

4/16 chill in Mel, eat out, get used to driving on left
4/17 phillip island
4/18 fly to syd get ready for pesach
4/22 fly to GBR
4/25 pesach program just 2nd days gold coast? Or Syd? Or Brisbane/Cairns...
4/28-4/29 uluru or quick jaunt to Hobart
4/30-5/3 Mel, drive gor/grampians
5/4 Shabbos in mel

Itin 2:

4/16&4/17 great ocean road
4/18 phillip island
4/18 fly to syd get ready for pesach
4/22 fly to GBR
4/25 pesach program just 2nd days golden beach? Or Syd? Or Brisbane/Cairns...
4/28-5/5 Tasmania
5/5 fly home from MEL

Also taking hotel/restaurant recommendations :) (I assume for MEL and SYD I'd do the Park Hyatt's)

If you do go to Uluru, it will be your last opportunity to climb it, as at the end of the year, it will be closed for climbing for good

Some consider GH nicer than PH in MEL

There is a great Pesach program in Gold Coast

There is nothing that remotely resembles good food in Sydney. Just go to Katzy's and have meat pies.

Try sovereign hills about 2 hours from MEL it’s a nice history place from the gold mining in that city you get to go into mines under ground and you see the style of living there, then they have a beautiful light and sound show at night fall, I really loved it, there is no kosher food there, so you’ll have to bring along

Try sovereign hills about 2 hours from MEL it’s a nice history place from the gold mining in that city you get to go into mines under ground and you see the style of living there, then they have a beautiful light and sound show at night fall, I really loved it, there is no kosher food there, so you’ll have to bring along

There's a wildlife sancurary in the same town as sovereign hill you'll have a close up experience with the wildlife over there especialy the kangaroos
