Amanera or Eden Roc

Anyone stay here at any of these resorts? that can offer some advice as to best way to book... kosher food.. which hotel is nicer overall... airport transfer etc.

Look into Jumby Bay in Antigua
Eden Roc isn’t likely to open any time soon

Not that I know of. You should be proactive in terms of explaining to the hotel what specifically you need in order to facilitate. New dishes, utensils, etc.
