They don't usually use shected cows because the best hide for tefillin is the neck

I don't know about the cows, but I think the guy running the shechita (if my assumption is right that this is the same guy) once told me that when he does lambs they use the hide for klaf.

-unless I'm misremembering and he said they don't use it because the animals are the wrong size. What I remember for sure is that he said there's a specific weight range that they make klaf from.

Basically what you said isn't a joke.. and some war stories of Mashgiachim checking the mikvah and only finding one wet towel and 2 dry for 3 shochtim..

I wasn't joking at all. I heard it straight from a very well respected rav hamachshir on meats who said it about his own hechsher. He was very straightforward about it. He is catering to a clientele to whom the inyanei kedusha of the shochet is very important al pi chassidus or whatever and this is a part of that. He told me that this is the difference in his run.
