Private Shechita - what should I order?

Anyone who's been around DDF for a while might be aware that I don't consume much beef, as I really need to feel comfortable with the source.

Someone is arranging a private Shechita next week, where I personally know and trust the Shochet. It's an opportunity to get beef for Purim and Pesach (and then some).

I was sent a price list, but am at a loss as to what I should buy (DW is OK with French Roast, Minute Steaks, Chuck Roast - which seems to be front Quarter. I think some flanken and Rib Steaks or a Rib Roast might also get good use). I am told that a full side is about 120lbs.

Suggestions? (also anyone interested, PMs accepted).

if its prime its not bad i recently paid 9.99 for full prime rack of ribs (35lb) and brisket is selling for 8.99 prime

Nothing to do with Financial Literacy, but if a side is about 120lbs. as mentioned in my OP, then I would guess a full one would be ~240lbs. (though it could obviously easily fluctuate 10-30lbs in each direction.)

The side doesn't include a lot of the meat on the animal.

most roast are leaner and ribs are the fattier cuts tho some roast are pretty fatty as well it really depends what kind of meat u like...

This is done the old way. Where you go to a goyishe place and do your shechita. They take whatever isn't Glatt, as to them it's no different that their non-kosher slaughtering.

As a matter of fact, I recall once hearing the Shochet who's shechting here lament the fact that Shechita is done in Jewish owned places, do it by a goy, and there's no problem if it's not 100% glatt, the goy will take it for his purposes.

Here is a wonderful Yid who cares about Halacha so much He will either go without meat or uses a private Shochet . So the obvious question is , tell us more ? What about Beis Yosef ? Melicha standards ? Bedikos ? Etc
But instead he goes off the rails and starts hiding behind Chabad !
Oh I am sorry , I mistakenly thought You were a God Fearing Yid who did his own research. Turns out it’s all about being very CHABAD.
