is this prime?
I am told that itís black Angus cows. Grading occurs after slaughtering, but should generally grade high.
I've been waiting over 5 years with bated breath for someone to say that!

It's a desired chumra. But my desire for meat supersedes it.
I know a non-chabad shochet if you are interested. However, I cannot guarantee that he doesn't learn Tanya or the like in secret.

As long as he skips פרק לב and the parts that speak about יחודו ית׳ I think CBC will be OK with that.

But I think he learns פרק ל״ז in
Likutei Maharan about the שוחט being מעלה the נפש that is in the דם הבהמה בגלגול. Does that work for you?

(will just add that I personally known the shochet, and would trust him blindly).
Would you let him swipe your cards? ;)

if you trust him for your sheilos that have ramifications beyond the realm of what we could possibly understand then you sure better trust him for lesser matters...

ETA: but as I think about it I actually think the opposite a little-when a rav paskens it kind of becomes his Ďproblemí so to speak . Itís our job to get Halachik guidelines from a Rav who knows the Halachah and it becomes his achrayus. Which has nothing to do trusting him personally.

I hear both sides

Back to the original OP question:
What cuts of meat should he order?

If you have the money and freezer space, get a whole side.  Assuming it's a better price that way and a great price over all. Also, since  you don't always have access to meat, you should probably get a lot.
With a side, you'll get to try out different cuts and have variety in your menu.

Another way to decide:  Look at your menu / make a menu and see what types of meat you tend to use and in what quantities.

Then you are naive. I trust my Rav that he wonít run off with my money. I donít trust him that he has infallible business acumen and will not run into financial difficulty or have a sudden great financial loss and be unable to pay back what he swiped. It has happened to many good people and being a Rav doesnít make him immune, stories of Rav Yisroel Salanter asking to borrow money from the guy who asked him to do a shechita for him notwithstanding

Thanks for the meaningful response. Followup question is how should I request it to be cut?

Not very practical as I don't really "tend to use" much meat. DW likes French Roast and minute steak as she's comfortable cooking those in a way that the entire family (more or less) enjoys. The question is what about the rest? How should I have it butchered? What might work out best (maybe we could dedicate something to a DO on my back porch).
