Indeed some treat gebrokt as Chometz mamash but I don't I don't burn gebrokts on Pesach nor do I kasher my pots after making knaidlach on the last day. I go thtis Psak from a Rav.

Not sure where you got the minyan part, but regardless it is definitely better to make your own Siyum (veven according to RSZ).

Braun is very good IMO
Local Jewish stores sell it for less
