Make a sandwich with matza and lettuce
Workflowy. You won't know what you're missing until you try it.

The R Shayale's Kitchen subsidized catering package gave everyone 2 lb of charoses, according to menu.

Can anyone recommend an accurate scale for weighing matza?

Rabbi Braunfeld, who wrote the book Moaznei Tzedek on the shiurim of matzo, has a few scales that he sells, all which are good for matzo. IIRC, Judaica Plaza sells them.

Instead of standard measurements like grams and ounces, it has Kezais and Kebeitzah?

No, it's a standard scale that he checked for accuracy. But it does include instructions for converting grams into kezeisim according to the prevalent shittos.

Practically how does one use a scale if they want to eat the Matzah they use at the Seder?

Do they weigh the entire Matzah then figure out what percentage of it they have to eat based on its total weight?

You pre-weigh and make bags of the right amount for each person. A major time-saver.

That's one way. (alternatively: weigh. groan)

When I've done this for a big family, I portioned out kezeisim in plastic bags, labeled with each family member's name and the mitzva it was for.

For example, I knew that Yaakov wanted whole wheat, so I put two kezeisim in a plastic bag and marked it "Mozti Matza". Then I put one kezayis in a bag and marked it "koreich," and another kezayis in a third bag and marked it "afikomon." I then put all three bags into a bigger bag labeled "Yaakov".

At the seder, I would hand the bags out to everyone before washing, and everyone would have their matzo prepared for all three mitzvos. All they would need is a small piece from the leader of the seder, and they already had their preferential type of matzo portioned out for them.

It saved tons of time, and it saved tons of matzo, as everyone always overestimates kezeisim.

I think the traditional way of having each woman (the adult men have their own kaara) hold up some matza and having the father shake his head until she adds enough or he gets tired of shaking is better.

In my family, the women have a tradition to lean away from the father so he can't "Nu" at the them what they're doing wrong.
Failing at maintaining Lurker status.

This. Especially helpful in the “olden days” of communal Sedarim.

Isn't the shiur based on fluid ounces rather than weight?

For the four cups or for Matzah/maror?

I would think the original kazatyis/kabey(tz)a are technically measures of volume, but when it comes to Matzah/maror the enumerators of Shiurim offer a weight.

It's based on fluid ounces, but for matzo, it is impossible to measure the ounces unless you grind the matzo. Hence, someone ground the matzo once and figured out the correct weight for a kezayis of matzo.

I recommend this book. It will pay for itself many times over after you eliminate the extra matzo usually consumed.

If you live in Lakewood, you can probably buy it directly from him.

Can't you put in in water and see how much it displaces in order to figure out the volume?

All the shiurim are volume measurements. How does weight match up to a kezayis?
