Any recommendations for a "good" toaster oven that fits 9x13 pans?
Im looking for suggestions one that people actually use as there are lots available from $80.

I recommend this one because it holds two pans at a time and you are sometimes in a rush to do two things at a time:
https://www.walmart.com/ip/Hamilton-Beach-XL-Convection-Oven-with-Rotisserie/120169727

Holds two 9x13 pans (you might have to bend the edges a bit) and is currently $74.84

This is fascinating. You can debate the hashkafic aspect of this (Rav Gifter spoke out against illustrated hagados, as it stints a child's imagination), but perhaps today's children need something like this (AYLOR).

The website also has links to all the props.

It’s amazing this Rabbi put this all together and is giving it away for free. Big Shkoyach!

Even if you don’t have interest, patience, or are poised for hashkafic reasons, you can still choose some things/suggestions that resonate with you or fit your needs/style/hashkafah.

Right, that's the reason for not eating gizzards as it my contain an unprocessed wheat kernel, I doubt it applies to the liver

Looking for recommendations for covering countertops.
I know a lot of people have corrugated plastic.
Any specific size? Thickness? Brand?
Are the ones on Amazon good for this? Best place to buy?

I used the plastic ones that have the lip at the end. It's lasted us a few years already, though it may be time to get new ones.

Does anyone have thoughts on either professionally cut ones, or contact-paper type that's not a mess to take off?

I used these. taped together so they can fold. they're 24 in long which is standard counter depth so minimal cutting but lots of taping.

Looking for recommendations for covering countertops.
We use (opaque) vinyl tablecloth cut to shape and size.  Folds up to almost nothing, and can seamlessly cover large and weirdly-shaped counters.  It's also incredibly easy to cut holes to fit over faucets and the like, with an almost invisible slit to allow it to fit over.

In the attached photo, there is one hole, plus a slit (towards the right---look closely to see it) for the faucet.

It takes some work the first year, but subsequently, setup is quick and easy.

(We don't put hot pots on the counter.)

Not everyone wants to start with an even meluban, which some would hold is necessary for a counter IIRC :)

Plus there is a minhag according to the Maharil to cover even after kashering. (which was because the possibility of crumb leftovers in the grooves, which isn't the case with our smooth flat counter surfaces, but many still adhere to this minhag)
