We will only be arriving at 2PM.
So I hope that we can get tickets and do Birkenau while waiting.

Auschwitz-Birkenau should be taking a while longer than an hour and 15 minutes..., Auschwitz-Birkenau is the main thing, so don't let plans for Auschwitz effect a proper visit to Auschwitz-Birkenau.

its possible to return again to Birkenau after finishing Auschwitz, thats the best solution.

For traveling between multiple countries in the same day with stops along the way, I recommend to use MyDayTrip.com.

I'm looking to put together a family Europe trip.
Ideally I would like for it to be over Shabbos.
I'm looking for somewhere in the mid January area.

Any tips would be appreciated

I would need a tour guide that knows the area.
Where to stay for Shabbos
Any other beneficial pointers would be greatly appreciated.

Which country would you like to be in for Shabbos?

In Prague you can eat at kosher restaurants on Shabbos.
In Berlin, Vienna, Budapest you can find home hospitality.
In Poland (and all of them) there's Chabad.

Depends what you like.  Personally I prefer home hospitality and getting a sense of how locals live in various Jewish communities when I travel, but Prague is probably most interesting to walk around if you don't mind eating in restaurants.  The food is great and the restaurants are very nice.  You'll be mostly with tourists, I'd imagine, but as far as ambiance you might like it better than the other places you mentioned.

You can book Auchwitz in advance. It depends on availability. The do hold some tickets that are released every day for that at the ticket office.

Have you considered a private tour? My kids went with their seminary and they used Heritage Seminars. They now also offer adult groups. And it sounds like you have a lot of people that you could be your own group. The website is http://heritageseminars.org/
