I'm looking to put together a family Europe trip.
Ideally I would like for it to be over Shabbos.
I'm looking for somewhere in the mid January area.

Any tips would be appreciated

I would need a tour guide that knows the area.
Where to stay for Shabbos
Any other beneficial pointers would be greatly appreciated.

Each of those locations have a lot in them, you'd need a while to properly cover them all....

Now that I have more time, let me explain...
I recently did Poland in a week, we were very rushed to cover ground, and yet I feel like we still didn't cover it all.
You can add to a trip like mine Kerestrir/Budepest which is half the distance as Berlin from Krakow. Prague AFAIK will need more than just a day or 2.
Warsaw is a day or 2 of what to do.
Lublin is easy another day.
And Krakow is a 2 or more days with Auschwitz/Auschwitz-birkenau.
That right there is a week without shabbos, and than there is all the other places on the way such as;
Przeworsk (Pshivorsk, Not sure what's still there)
Dynov
Warka (Vorka)
Ger
Kozienicki (Koshnitz)
Kazimierz (Koshmier)
Shinov
Ropshitz
Riminov
Majdenak
And a whole lot more.
The list goes on and on, not sure how much kvarim you intend to visit, but even the basics, with the other attractions, such as Museums, Ancient Shuls etc. is plenty for a week in Poland alone, especially if you're not a small group. Also remember the weather there is bitter in the winter.

There's two focuses of the trip. Germany, with a target of r Samson Rachel Hirsch, yartziet is right after channuka. Hoping to plan around that..

And Auschwitz.

The girl is there's plenty of things along the way and Poland, pruage ect that can fill up the week.

Dear Sir or Madam,

Auschwitz II-Birkenau is accessible for individuals without reservation all day long within its opening hours.

Admission to the grounds of the Auschwitz-Birkenau Memorial is free of charge.

Best Regards,
Piotr Hałat

Is there a point in going if you cannot enter the museum?

Auschwitz-Birkenau doesn't need tickets, and is the more important one.
Auschwitz needs a (free) ticket and is pretty much a museum.
What museum are you referring to?

To be honest, I am not sure.
Dear Sir or Madam,

Unfortunately entry passes without an educator which were available online for that day are already booked. The number of Entry Passes available online is limited and cannot be increased.

I’d like to inform you that a person who arrives without a booked reservation will be able to enter the Museum. The entry pass will be issued at the visitors’ centre. Entry will only be possible, however, in the first available hour. During busy periods, this may result in a long waiting time.

If you would like to visit the Memorial without a guide you can do it between 7.30 a.m. and 10.00 a.m. or after 4.00 p.m. an you can stay on the grounds of the Museum as long as you wish during the opening hours – that’s not apply in Birkenau. Auschwitz II-Birkenau is accessible for individuals without reservation all day long within its opening hours.

Best Regards,

Piotr Hałat

We will only be arriving at 2PM.
So I hope that we can get tickets and do Birkenau while waiting.

Auschwitz-Birkenau should be taking a while longer than an hour and 15 minutes..., Auschwitz-Birkenau is the main thing, so don't let plans for Auschwitz effect a proper visit to Auschwitz-Birkenau.

its possible to return again to Birkenau after finishing Auschwitz, thats the best solution.
