It is reality and you should therefore only rely on a good Hechsher which me ensuring it is really good and not brushing off issues that are brought up

oh sure. In the spirit of tikun olam, these Rabbis are actually terrible people.... charging for certification when in reality, leshitasam, vegetarian restaurants don't require certification
