hmmm. sounds like fun. Only thing I don't like about wheat beers is that then the spent grain bread is full of rice hulls.

but please, post the recipe!
You use the spent grains to make bread? How is it?
Anyways this recipe is mostly extract.

Anyways this recipe is mostly extract.

ah, I've got an all grain system. It's really not that much more work; you just need a picnic cooler slightly modified with a washing machine hose and a valve.
Comes out a bit cheaper on each batch, and you have  a bit more flexibility in choosing grains. And you end up with 10 lbs of spent grain to make bread with.

I make this recipe http://howto.wired.com/wiki/Bake_Bread_With_Spent_Grains_From_Home_Brewing except that I double the amount of spent grain in it. And I use yeast that I harvested from the fermentation barrel.

I kind of need a wort chiller next. I'll build one for the next batch out of copper piping and a thing to clamp onto the faucet. Should cost about 40 buck.

5 Gallon Batch

8oz of Honey Malt
3.3lbs Pilsen Light liquid malt extract
3lbs Wheat dry malt extract

.5oz Fuggles hops (60 min)
.5oz Fuggles (30 min)
.5oz freshly crushed coriander (10 min)
1oz sweet orange peel (10 min)

1 package Wyeast 3944 Belgian Witbier Liquid yeast
5oz corn sugar for priming

No need for a secondary fermenter on this one. Let it sit on the yeast cake for 2 weeks and it should be ready to bottle then. Measure the SG first to make sure its ready obviously.

I think it's easier to just buy a wort chiller. They are only a bit more expensive than making it yourself ~$45. Link.

My bro's built it over bein hazmanim. I can ask where they got instructions from.

I don't reuse the yeast, because I'm too lazy to make sure to keep it sterile and to keep it under the right conditions. I just use it for bread until there's none left.

Agreed, reusing yeast is a real pain. Sierra Nevada has been using the same strain in every brew since they opened, which explains why all of their beer tastes the same.

Bought it. It's a wild beast. It blew the cover off my primary twice and would have done it again but I just took the cover off  until the yeast started flocculating. Beer ended up being about 8.5% ABV.
