What are the major differences?

if a desktop is way cheaper because of windows 10 home should i care?

I believe the only real difference for home or small business users is not being able to RDP into it. Once you get to bigger business it's missing some important features like being able to add it to a domain.

You are missing the Pro in your question  :P

The major differences for (somewhat) plain people are that Windows Home doesn't have RDP (server, so you cannot log in to it with RDP), no Group Policy manager (although you can usually set them all in the registry if you want), Windows Pro has a defer updates option to delay Windows Updates from being installed right when it comes out, Bitlocker encryption support, and the Windows Hyper-V hypervisor.

That's of course until TeamViewer blocks them for suspected commercial use..., also they do not want it to be on screen/speaker/etc of the local PC while they are working. So there is still reasons why people prefer RDP. But I digress...

Right but is it worth the extra cost for someone who may never use it? That was my point. I've used both and RDP is definitely a better experience if you're going to use it.

You can use anydesk.  Just as good as tram viewer.  Actually better because u can toggle screens
