I don't think many people said it was straight out assur, IIRC. Some said it was unethical, or it was a gray area halachicly.

IIRC there were opinions that way (not mine). That's why I stated ALOR  (ask local rabbi)

Does anyone here by any chance know of a mareh makom that would explain how to reconcile the shitas haramba"m in regard to ayin hora, sheidim etc. with a)all the gemoras that discuss sheidim and more importantly the issur of counting benei yisroel?

Most of these things are explained by the rambam himself in many places.

They are discussed in many many reshonim and achronim.

the rambam generally doesn't actually discuss it but merely mentions it benogea lehalacha. Rabbi meiselmans book- I began to read it but never really got on with it.
