Some poskim hold that you can cover the knob or buttons instead of a blech.
Without a blech, it would have to be edible before shabbos.
If the control is from Bluetooth or Wi-Fi that may not work since you won't be there to see the covering.

It would need to be 1/3 to ½ cooked before shabbos starts or totally raw at the being of shabbos.

since thats the way to control the fire, over here the coil is maybe like coals where you should need a cover on the coals since you can move them
eta: also not sure if its considered hatmana from the water or not

The poskim who hold that you cover the knobs hold that way since that is how you control the modern fire. If there would be a way to open and shut the heating element, I could see why you'd want to cover that.

i dont need to open the element i can just move the machine to a different part of the pot and that could be a problem of bishul

the problem i see is that you can move the sous vide/coals around and hatmana cuz its covered in water neither of which applies to a crockpot although it does have its own set of issues

on a stove or crockpot you cant move the heat source except thru controls, a sous vide can be moved closer or farther from the food just like coals

I do have silver foil under the insert. Though some say this is a heat conducter and is not a blech. But I don't do chazorah so it's fine.

For hatmana, insert is raised.
 Iirc I looked into this once that there is no problem of hatmana cuz of the bag in water. Don't remember the reason now though.

+1 by sous vide the water covers food entirely and in addition is what is cooking it, by crockpot you dont need the water to cook nor is it covering the cholent
