They don't use utensils to prepare ice. The ice goes from an ice machine to a bag/box. The scooper is always used cold. Pretty sure everyone uses ice buckets in hotels.

Ever bought a coffee in 7/11 or any rest area etc ?
I personally don't drink coffee, but I personally would not drink from starbucks nor any non kosher store who prepares there coffee together with the rest of treif store, they use the same hands filled with the kentucky fried chicken or in starbucks when the just finished cutting in half the cheese burger which they warmed up in the microwave/oven/toaster and then go fill your cups of coffee up and use the rag to clean the machines with there oily hands touching everything, and they use the same dishwasher for the basic metal utensils which they use to make the coffee, and together cleaning all the plates which served the food and non kosher cake /meat /cheeses...

 To me I see it all treif, and don't see why there's a heter to drink from these stores, the funny part is I have never seen any rav nor and hashgacha given or allowed such coffees from such stores..
 Or maybe there is and I never saw it, I mean a normal hashgacha not some rabbi out in the boon docks.
 Unlike glass which is totally different which im sure lots hold its ok to use whether a bar or on a date...

I think star-k allows Starbucks that don't sell hot foods...
That's only Starbucks because of their unique washing process. Same would not apply to McDonald's, etc.

There are various minhagim regarding kashering to switch between milk and meat with many not allowing it at all other than when kashering anyhow between chometz and pesach. AYLOR.

In a case where one may kasher to make the switch, if all (pot and items being kashered) are aino ben yomo then there is no issue at all and no need to change the water. It is important to ensure that there is nothing in nicks and serrations which is often impossible. If there is that needs to be dealt with on a case by case basis depending on the exact situation.

there is a minhag brought down in the mg"a in Hilchos Yom tov not to kasher back and forth from milchig to fleishig, to prevent a mess up. Sephardic are not makpid and even Ashkenazim have several ways around this.
1. Kashering for Pareve use.
2. Treif it up first
3. Kashering for pesach
4. Buying from someone else

In all of these cases (based on different noisei keilim) one can kasher milchig and fleishig keilim.

You don't have to switch the water since it's a n"t bar n"t. If one of the keilim is Aino ben yomo you can even kasher them at the same time.
Lechatchila you should not use the kashering water for any other food purposes since you should not be goirem a n"t bar n"t lechatchila (amoung other reasons)

That is the typical reason someone would wish to kasher milchig or fleishig utensils.
